Total-  servings 3-4 medium-sized paratha.

Ingredients required:-

  • 3-4 medium-sized potatoes
  • Water- to boil potatoes and knead the dough
  • Green chilies 1-2 finely chopped
  • Salt to taste
  • Red chili powder 1/2 tbs
  • Coriander powder 1/2 tbs
  • Dry mango powder 1/2 tbs
  • Roasted cumin seeds powder 1/2 tbs
  • Asafoetida 1/4 tbs
  • Peas 1/2 cup (boiled and mashed)- completely optional
  • Coriander leaves, roughly chopped
  • Oil/ butter- as required
  • Wheat flour- 1 1/4 cup (1cup= 250gms)

Instructions:-

For making stuffing-

Boil 3-4 potatoes in a pressure cooker. Add sufficient water so that it completely covers the potatoes. Cook on medium flame till 3-4 Whistles.

Now let the cooker cool on its own. When the pressure got released from the cooker, drain the water and keep potatoes in a separate bowl. Peel the potatoes and mash it finely.

Add boiled and mashed peas to it (optional), peas enhance the taste as well as increase the nutritional value.

Now put salt to taste, red chili powder, coriander powder, roasted cumin seeds powder, dry mango powder, asafoetida.

Put finely chopped green chilies, roughly chopped fresh coriander leaves.

Mix it well and taste it to check salt and other spices.

For making dough:-

Take wheat flour in a bowl add 2-3 ounces of salt, 1tbs oil. Now start adding little water at a time and knead a dough which is not too soft or not too hard.

Keep it to rest for 10 minutes by covering it with a cloth or plate.

After 10 minutes knead for another 10-20 seconds.

The dough is now ready.

For rolling paratha:-

Take two small balls out of dough. Flatten it and dust with some flour. Now roll them into 3-4 inches diameter rounds.

Take some stuffing and place it in the middle of rounds leaving 1-inch empty space.

Now place another round on it and press from sides with fingertips. Start rolling it, use flour to dust it whenever required. Roll it until it becomes a 7-8 inches round.

For cooking paratha:-

Put a tawe on medium flame until it gets hot. Spread 1 tbsp oil and place paratha. Now cook it on both sides until it gets golden brown on both sides.

Paratha is now ready to eat. Put a little butter on it.

Serving suggestions:-

Serve with yogurt or curd or any pickle of your choice.

You can serve it with tangy tomato chutney or chilies and coriander leaves chutney.

You can eat at the point of the day. It's always good to go the option to eat.
