French cuisine is a wonderful thing, and there are many fancy dishes you should also try, but if you want to be truly blown away, try the things you think you already know well the simplest things.

French cooking is not so much about ingredients as it is about technique. The ingredients tend to be very regional, but what makes something "French" is the cooking process. So try anything that looks well-made.

I am also a big foodie lover, so specially prepared this top 10 foods list for you all. Like I have tasted each and everything, you can also go and try these foods and enjoy your trip. Here's our top (I'm from the South of France; therefore, my opinion is very partisan):

1) Lamb: "Carré dagneau" is just a must.

2) Duck magret: Ideal with coarse beach salt and pepper, a bit more extravagant with Raspberry sauce. Duck aiguillettes and foie gras are perfect too :) Great factors for goose generally include artichoke hearts, asparagus brains, or do-it-yourself fries.

3) Goat cheese: appreciate it with a salad, honey, and walnuts, or with cherry marmalade. Crottin de chavicol, Comté, and Roquefort are good cheeses too. The best is to be in an industry and try a little everything to produce one's own opinion about french cheeses.

4) Saucisson: appreciate it as an appetizer, with burgundy or merlot wine, chips, or perhaps a good craft beer.

5) Raclette: Ideal when the current weather is snowy but very fatty in summer.

6) Seashells: If you are near the beach, you are able to often find restaurants from that you simply see the mussel farm installations (perfect at night with bright wine and onions, or bitter cream centered sauce - and do-it-yourself fries). Oysters are extremely popular on the Atlantic shore and are perfectly fresh, with lemon juice or with strawberry vinegar.
