In my personal experience in my side, we mostly cook chole bhature, samosa, pakode, matar panner, shahi panner, kofta rice, puri sabzi, and many more food dishes
In sweets so many sweets maturapeda, gulab jamun,Kaju katli, Pasquale ,barge , besan ke laddoo, Bundi ke laddoo, Hawaii, kheer this all is the famous sweet dish on holi Festival.
According to the region on India food dish and celebration style is changing but the color is the item that same in all India and the spirituality and love for this Festival is same in the overall world for India
So Holi is the one of most prominent and famous Festival of India in India and outside India too
