One of the reasons is that you feel like eating less than you usually would because it makes you feel hungry.  Another reason is that the fibers mix with the starch and bind to prevent it from being absorbed.  For this reason, the absorption of more glucose into the body is reduced, and the production of fat from glucose is reduced, which helps reduce obesity.  It has been found that people who regularly eat high-fiber foods are less likely to develop obesity.  Long-term intake of fiber supplements has been shown to reduce obesity and improve heart and stomach health.
