Components

Two cups of flour, all-purpose

one-fourth cup sugar

A single spoonful of powdered sugar

half a teaspoon of salt

Half a cup of chilled, unsalted butter, divided into little pieces

half a cup of dried cherries

one-third cup heavy cream

One tsp vanilla extract

Extra cream for brushing and coarse sugar for dusting are optional.

Technique

Adjust the oven temperature to 400°F (200°C) and place parchment paper on a baking pan. - In a sizable basin, combine the flour, sug

ar, baking powder, and salt. - Stir together the dry ingredients with the cold butter pieces using a pastry cutter or your fingertips until the mixture resembles breadcrumbs. Add the dried cherries and stir. - Optional: Dust with coarse sugar and brush the tops with more cream. Bake for 15 to 18 minutes, or until well-browned. - Allow them to cool down a little before serving.- Combine the heavy cream and vanilla extract in a separate basin. Stirring constantly, slowly incorporate the cream mixture into the dry ingredients until the dough comes together. - Place the dough onto a surface dusted with flour, and work it into a ball with a few gentle kneads. - After the dough is flattened into a circle that is approximately an inch thick, cut it into eight wedges. Place the scones onto the oven tray.

Advice: For flakier scones, work with cold butter and gently manipulate the dough. You can use other dried fruits or nuts in place of the dried cherries. Serve warm with lemon curd, cream, or jam.
