Hello friends, Today  our recipe is Rogan Josh made from mutton meat. No more talks lets start how to cook this delicious dish. You can take any portion of meat but front leg meat is better to choose. At first, take 1kg meat, wash it and boiled the meat covering the pen top with 4 to 5 clove of garlic, 3to 4 bay leaf, and salt. Now I will boil the meat 40% keeping the burner at it's middle temperature.

Meanwhile I will fry some fennel seeds of two tablespoons in low heat as long as one minute. Now with it, I will take 4 black Cardamoms, Cinnamon stick 4 to 5 pieces. Black pepper 10 to 12 pieces, cloves 6 to 7 pieces. I will grind these ingredients. Now take 1/2 cup dry onion fry (you can purchase or make it yourself.) it with 1/3 table spoon of mustard oil at middle temperature for a minute.

Watch the boiling meat there might be some froth, you have to take it off. I have to take off the clove of garlic and bay leaves while doing boiled the  meat. Now keep the stock & meat separately. It cooked such a way so that we may use stock instead of water as result we got the full flavor. Now we mixed the meat with fried onion and some stock when needed.

In this part of cooking when the color of meat is slightly changed I mean when meat color becomes light brown, I will put the grinded spices in it along with some paste of garlic and ginger (garlic paste 1 tbsp ginger paste 1 tbsp, traditionally it may use ginger powder) and add some salt (We have to careful about salt because stock already contain salt.).

Now cooked  it untill it gets little bit dry. I will pour full stock in it and cook for some time, Meanwhile we will take some Kasmiri red chilli powder 2table spoons. It is the first main ingredient of the curry. Those who can't have spice may use dry chilli powder paste instead of it. Now cover & cook it for 10 minutes keeping the temperature middle of the burner. Now I will put some smooth beaten yogurt 1/2 cup and I will boil full curry covering the pan. I will take another pan and put 2 table spoon mustard oil and Ghee 1 table spoon and heat up a bit. This is the second most important ingredient of this recipe. Pour it on the meat curry. This dish contain little more oil so it called Rogan Josh. Finally, our Kashmiri Rogan Josh recipe is made now you can serve it hot.
