How to find fine water

Drink specialists examined the liquid in their glasses closely at a meeting in April in Athens, Greece. She exposed them to the light. They occasionally spit them out into receptacles after tasting them. They also talked about the purity and mineral content.

But these were not wine-tasting experts. They were tasting "fine water" instead.

The specialists are Fine Water Society members. They had gathered for the annual taste competition in Athens. Their actions are indicative of the expanding market for upscale water, as some bottles fetch prices of more than $100 a litre.

Businesses gather what is referred to as "fine water" from places like volcanic rock in Hawaii, ice melting from glaciers in Norway, and mist rising from Amazonian or Tasmanian tropical forests.

Members of the Fine Water Society heard about the habitats that are used to gather water during their meeting. Additionally, they contrast the TDS, or total dissolved solids.

Low TDS waters are similar to rain that hasn't reached the ground. High TDS water has a high mineral concentration, which might include calcium, magnesium, potassium, or sodium, among other elements. Examples of this type of water are the Vichy mineral springs found in France and Catalonia, in northeastern Spain.

Some restaurants in the US and Spain now have menus that pair particular types of fine water with specific dishes. For example, high TDS water could pair well with steak. Fish and low TDS, more akin to rainwater, may be compatible.
