Used in creating Spicier variants of Chillies

The notoriously spicy King Chilli scores 855,000 SHUs in Scoville test and 1,041,427 SHUs using HPLC analysis. An interesting trivia about King Chillies is that they are used in creating hybrids of other hot variants of chillies. For instance, the innards-meltingly hot Naga Viper.

An American Professor by the name of Wilbur Lincoln Scoville created the ‘Scoville Organoleptic Test’ in 1912 with the aim of measuring heat (piquancy). Scoville Heat Units is the standard unit to measure the spice content of Chillies and peppers.

In the ‘Scoville Organoleptic Test’, a certain amount of ground pepper is dissolved in alcohol. The capsaicinoids (heat component) from the pepper is extracted before being diluted in a solution of sugar water. The diluted liquid is then given for a taste to a panel of five trained tasters until at least three of them can no longer detect the heat. The heat level is based on this dilution and rated in multiples of 100 SHU.

In 2007, King Chilli was certified as the hottest chilli pepper by Guinness World Records. This variety of chillies was said to be 400 times hotter than Tabasco sauce which measures 2,500–5,000 SHU on the Scoville scale.
